A large griddle is
useful for heavy duty holiday food preperation, such as preparing krotekake
or dried lefse. Or if you want to make a large amount of tortillas in a hurry.
SVELLE/LAPPER (similar to American pancakes)
2 eggs
1/2 cup sugar
2 cups buttermilk
3 cups flour
1 tsp baking soda (mixed into the buttermilk)
Beat eggs and sugar together. Add other ingredients. Bake on hot griddle.
If necessary oil griddle lightly. Lapper (or patches) are eaten cold with
jam and sour cream, or brown cheese.
